Resolved:
One of our hypervisors has gone offline. We are working with our infrastructure provider on this region to identify the cause and restore availability. All application located on this machine was redeployed, addons are currently down.

Identified
The hypervisor is still unresponsive and has fallen out of our datacenter provider's (OVH) monitoring. Remote management (IPMI) is currently unavailable. OVH has opened a physical intervention on the machine, we are waiting for on-site action from their team.
Watching
The hypervisor is back online. We are currently restoring services and verifying stability. Our infrastructure team is investigating the root cause of the outage
